How to Make White Sauce


White sauce is also known as Bchamel Sauce. This sauce is made from milk. It is one of the main sauces used in French cuisine and recipes. It is also used in the Italian cuisine. This is a base sauce and is used to make a number of other sauces. Traditionally, the white sauce is made using scalded milk. The scalded milk is whisked with white flour and butter. Another traditional method of making white sauce is to make it, by kneading flour and butter with scalded milk. The thickness of the sauce can be adjusted as desired, by changing the proportion of milk and flour used to make the sauce. We will now see white sauce recipes, which can be used for different recipes from different cuisines.

How to Make White Sauce

For Pasta

The white sauce for pasta has to be thin in consistency, so that it can blend well with the pasta. If the sauce is thick, it may not enhance the taste of the pasta. Using this recipe, you will be able to make white sauce for pasta for 4 people.

Ingredients
  • 425 ml Milk
  • 1 Bay leaf
  • 1 Blade of mace
  • 10 Whole black peppercorns
  • 1 Slice of onion
  • tablespoon Parsley stalk chopped
  • 20 grams Flour
  • 40 grams Butter
Method
  • In a thick bottom pan pour the milk and all the ingredients other than butter and flour. The ingredients help to infuse flavor to the white sauce.
  • Bring the milk to a simmering boil.
  • Remove the milk from heat and let is cool down.
  • Before you go to the next step make sure that the milk has cooled down completely, else the sauce will become lumpy, which is not your goal.
  • Strain the milk and pour it back into the pan.
  • Mix butter and flour together and then add the mixture to the milk.
  • Let the sauce come to a simmer, as you continue to whisk the sauce.
  • Whisking the sauce is important, so that the all the grains of flour burst.
  • Continue to whisk the sauce, till the flour is cooked. At this point the sauce may look very thin, but it will thicken up after it starts to cool down.
For Pizza

The white sauce for pizza is thick in consistency, so that the sauce does not slide out of the pizza base. When you are making the white sauce for pizza, make sure you measure the ingredients well as described in the pizza sauce recipe.

Ingredients
  • 3 tablespoons Flour
  • 1 cup of Milk
  • 3 tablespoons Butter
  • Salt & Pepper as per taste
Method
  • Melt the butter in the sauce pan. It is recommended, that you melt the butter at medium heat, so that you do not burn the butter.
  • After the butter melts, slowly sprinkle the flour into the butter as you continue to stir it, to avoid lumps from being formed.
  • Stir the butter and flour mixture for 30 to 40 seconds, till the flour is cooked.
  • Add salt and pepper to the flour and stir till well mixed.
  • Then add milk to the mixture and continue to stir, till the milk is well blended with the flour mixture.
  • As you continue to stir, the sauce will thicken.
  • If the sauce has not reached the desired consistency, continue to stir.
  • When the sauce thickens remove it from heat and use it on your pizza.
These recipes tell you how to make white sauce, however, they are the basic recipes to make white sauce. You can change the recipes of the sauce, depending on the dish you want to make. The white sauce can be made using half stock and half wine instead of milk. If you are making the sauce to be eaten with poached fish, then you can replace half of the quantity of milk with half of poached liquid. However, the poached liquid should be cold, else the sauce will become lumpy.
