Ginger Chicken Stir Fry
Ingredients
  • 2 teaspoons cornstarch
  • 1 cups chicken broth
  • 2 tablespoons low-sodium soy sauce
  • 2 teaspoons lemon juice
  • 2 teaspoons fresh grated ginger
  • 2 tablespoons vegetable oil
  • 1 pound skinless, boneless chicken breast, cut into strips
  • 4 cups broccoli florets
  • 2 medium carrots, sliced
  • 1 small onion, chopped
  • cup chopped fresh cilantro leaves
  • 3 cups hot cooked regular long-grain white rice
Method of Preparation

Smoky Hot Ginger Chicken Stir Fry
Ingredients
  • 1 pounds skinless boneless chicken thighs, cut into inch pieces
  • 2 tablespoons cornstarch
  • 2 tablespoons peanut oil
  • 2 tablespoons Shaoxing wine
  • 10 dried red chilies
  • cup finely chopped fresh ginger
  • 1 tablespoon light brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 tablespoons snipped chives
Method of Preparation

In a medium bowl, toss the chicken, cornstarch and wine and allow it to stand for an hour. In a wok, heat the oil and add the chilies and stir-fry them over moderate heat. Fry till they begin to darken after about 1 minute. Using a slotted spoon, transfer the chillies to a plate. When the oil in the wok is shimmering, add half of the chicken and stir-fry over high heat. Fry for about 3 minutes, till the chicken pieces are lightly browned and cooked thoroughly. Transfer the chicken to the plate with the chilies. Similarly, fry the remaining chicken. Once done, return the chicken and chilies to the wok and add the chopped ginger. Cook till fragrant, for about 1 minute. Then add the brown sugar and stir-fry till the chicken is lightly caramelized for about 1 minute. Add the soy sauce, rice vinegar and chives to the sauce and stir-fry until the sauce is just thickened, for about 30 seconds. Serve immediately.

Lemon Ginger Chicken Stir Fry
Ingredients
  • 1 pound skinless, boneless chicken breasts, cut into 1-inch strips
  • teaspoon freshly ground black pepper
  • 1 teaspoon canola oil
  • cups thinly sliced onion
  • 2 tablespoons minced peeled fresh ginger, divided
  • 1 teaspoon dark sesame oil
  • 2 cup julienne-cut yellow squash
  • 1 cup red bell pepper strips
  • 1 tablespoon minced fresh garlic
  • Lemon rind
  • 3 tablespoons honey
  • 3 tablespoons low-sodium soy Sauce
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons water
  • 2 teaspoons cornstarch
Method of Preparation

Sprinkle black pepper over the chicken. In a large non-stick skillet, heat the canola oil in a large non-stick skillet over medium-high heat. Add chicken, onion, and 1 tablespoon ginger, and stir-fry for 4 minutes. Then remove from pan and keep warm. In a pan heat sesame oil over medium-high heat.
