Slow Cooker Chicken Recipes


A slow cooker also known as a crock pot is a countertop electric cooking appliance that provides one with the luxury of unattended slow cooking on low temperatures. The concept of a slow cooker is taken from the traditional way of cooking, where food was cooked unattended for long hours in earthen pots. Chicken is the most frequently prepared food and is full of nutritional value. Using slow cookers for cooking chicken results in low fat, delicious and easy-to-make meals.

Chicken and Dumplings
Ingredients
  • Boneless chicken breast halves, 4
  • Condensed cream of chicken soup, 10.75 oz
  • Finely diced onion, 1
  • Butter, 2 tbsp
  • Refrigerated biscuit dough, torn into small pieces, 10 oz.
Put chicken, soup, onion and butter in the slow cooker. Add enough water to cover all ingredients. Set the temperature to high and cook covered for 5 to 6 hours. Half an hour before serving, add the torn biscuit dough in the slow cooker and mix well. Cook until the dough is soft. Serve hot with your choice of bread.

Crock pot Peanut Chicken
Ingredients
  • Boneless chicken breasts, 3 lb
  • Orange juice, cup
  • Peanut butter, cup
  • Chicken stock, cup
  • Low sodium soy sauce, 3tbsp
  • Garlic powder, tsp
  • Ground ginger, tsp
  • Sugar, 1 tbsp
  • Pepper, tsp
In a slow cooker, add all the above ingredients and mix well. Cook covered on low temperature for 6 to 7 hours. Serve hot either with noodles or rice.

Slow Cooker Chicken Stew
Ingredients
  • Boneless chicken breast meat, 3 lb
  • Small red potatoes, 3
  • Small onion, 1
  • Dry onion gravy mix, 1 small packet
  • Apple peeled and cut into eighths, 1
  • Condensed cream of celery soup, 1 can
  • Olive oil, tsp
  • Crushed garlic, 3 cloves
  • Water, cup
  • Ground black pepper, tsp
  • Salt to taste
  • Italian-style seasoning, tsp.
Heat olive oil in pan and saut garlic and chicken until lightly browned. Add sauted chicken and garlic along with potatoes, onion, dry gravy mix, apple, celery soup, water, pepper, salt and seasoning. Set the temperature to low and cook covered for 6 to 8 hours. Serve hot with your choice of accompaniment.

Crock pot Chicken Merlot with Mushrooms
Ingredients
  • Boneless chicken pieces, 3 lb
  • Hot cooked noodles, 2 cups
  • Merlot (Dry red wine) or chicken broth, cup
  • Sliced fresh mushrooms, 3 cups
  • Large chopped onion, 1
  • Minced garlic, 2 cloves
  • Chicken broth, cup
  • Tomato paste, 16 oz can
  • Pepper, tsp
  • Salt, tsp
  • Sugar, 2 tsp
  • Quick-cooking tapioca, 2 tbsp
  • Snipped fresh basil, 2 tbsp
  • Shredded Parmesan cheese, 2 tbsp
In a slow cooker, place mushrooms, onion, garlic and chicken pieces on top of the vegetables. In a large bowl mix chicken broth or red wine, tomato paste, tapioca, salt, pepper and sugar and 1 tbsp basil and pour the mix over the chicken pieces in the slow cooker. Cook covered on low temperature for 7 to 8 hours and when done, stir in the remaining basil. While serving, spoon the chicken pieces over hot cooked noodles and sprinkle it with Parmesan cheese.

Tender cut meat of chicken is perfect for slow cooking. You can add a variety of vegetables and even some fruit for a tangy taste and be completely assured of providing a healthy one pot meal for the family.
