- cup dry breadcrumbs

- cup (1 ounces) shredded provolone cheese

- 1 cups bottled fat-free tomato-basil pasta sauce

- 1 large egg white, lightly beaten
Take a shallow dish or bowl and add breadcrumbs, basil, Parmesan cheese, parsley and 1/8 tsp salt. In another bowl add egg white. Now dip each chicken piece in egg mixture and then in the breadcrumb mixture, set aside. Heat a nonstick skillet and melt butter in it, over medium- high heat. Cook chicken in the melted butter for about 3 minutes, on each side. Keep the chicken warm. Meanwhile, take a microwave-safe bowl and add pasta sauce, 1/8 tsp salt, pepper and vinegar in it. Cover the bowl but keep a small space, microwave for about 2 minutes on high. Pour this sauce over warm chicken and then coat evenly with provolone cheese and remaining Parmesan cheese. Chicken Parmesan with Almonds
Ingredients
- 2 tsp minced fresh tarragon
- 1 egg, beaten
- 1 tbs minced garlic
- cup grated Parmesan cheese
- 1 tbs olive oil
- 3 pounds chicken breast halves, boneless and skinless
- chopped red onion
- 1 cup white wine
- cup teriyaki sauce
- 1 cup sliced almonds
Preheat the oven to 375 degrees cut the chicken breast halves into two. Take two shallow bowls, add beaten egg to one bowl and almonds to another. Chicken Parmesan with Crackers
Ingredients
- 4 ounces cream cheese, softened
- 1 (10 ounce) package frozen chopped spinach, thawed, well drained
- 1 cups mozzarella cheese, divided
- 6 tbs grated Parmesan cheese, divided
- 6 small boneless, skinless chicken breast halves, pounded to -inch thickness
- 1 egg
- 10 crackers, crushed
- 1 cups spaghetti sauce, heated
Preheat the oven to 375 degrees F. Take a bowl and add 1 cup mozzarella cheese, cream cheese, 3 tbs Parmesan cheese and spinach in it. Blend well and then spread onto chicken. Roll up chicken tightly by starting at one short end, to secure it at place, use wooden toothpicks and set aside. Take a shallow dish, beat an egg in it and add crackers, remaining Parmesan cheese. Dip the chicken pieces in egg and then in the crumb mixture. Place these pieces in a 319 inch baking dish, sprayed with cooking spray. Let the seam-sides be down. Bake for about 30 minutes, discard the toothpicks and serve with spaghetti sauce and mozzarella.
