Vegetable oil for deep-frying

Preparation
- Grind the chilies, and the mint together to form a paste.
- Apply the mint and chili paste to all the chicken breast strips.
- Now sprinkle the strips with the lemon zest (grate the lemon skin over the chicken) and add salt.
- Allow the chicken strips to marinate for about two to three hours in a closed container in the refrigerator.
- Now heat the vegetable oil in a deep-frying pan.
- Once, the oil is sufficiently heated, deep-fry the chicken strips until they are golden brown.
- Once, fried, remove on a tissue paper to soak up the excess oil.
- Now transfer to the serving dish. Garnish with some fresh mint leaves and serve with slices of fresh lime.

- Mix the ingredients until you get a smooth batter and add water only if required.
- Now heat the oil in a deep-frying pan for about 2 minutes.
- Now dip the diced chicken in the batter briefly and immediately deep-fry.
- Transfer the diced chicken on a dish covered with tissues to soak the excess oil.
- Now, place the diced chicken on the serving dish, pour the tangy sauce over the diced chicken and garnish with chopped spring onions and coriander.
