I thing, your mind's not made up here! Well, let me help you with that. How about cooking something different today. Something unique like lemongrass. All you need to arrange for is a lemongrass plant from the market or your garden (if you have one) and voila! You are sure to end up cooking one of the best lemongrass chicken recipes for your soon-to-come guests!
Mouth-watering Recipe for Lemongrass Chicken
Ingredients
- 8 chicken thighs
- 1 tablespoon garlic (minced)
- 1 teaspoon salt
- 2 tablespoons ginger (grated)
- 2 sticks lemongrass (chop the white part finely)
- 2 spring onions (the green and white part finely chopped)
- 1 tablespoon palm sugar
- 3 chillies
- 2 tablespoons vegetable oil
- Coriander
- 1 lime (cut into wedges)
Check whether the 8 chicken thighs have no extra fat in it. If it has, cut the extra thick parts properly so that the marination seeps through the deep ends nicely. Take 2 tablespoons of vegetable oil and combine all the measured quantities in it. Mix well and leave the entire chicken mixture to marinate for 10-15 minutes. After a while, over high heat, barbecue the chicken turning and twisting all the parts so that they roast well. Poke a fork into the barbecued chicken to check for its cooked condition, if so, serve hot. For decorating the plate, add crisp salad leaves and lime wedges thoroughly garnished with coriander leaves. You can try steaming some rice and adding that as well to gain a rich taste.
Thai Lemongrass Roast Chicken Recipe
Ingredients
- cup lemongrass (finely chopped about 3 or 4 stalks)
- 2 tablespoons shallots (finely chopped)
- 1 tablespoon garlic (finely chopped)
- 1 tablespoon soy sauce
- 4 teaspoons fish sauce
- 1 teaspoons kosher salt
- 1 tablespoon crushed red pepper flakes
- 3-4 lb whole chicken (rinsed and patted dry)
- 2 tablespoons sugar (granulated)
- 2 tablespoons fresh cilantro (finely chopped)
- 1 tablespoon vegetable oil
Take a large cooking pan or dish which can hold the 3-4 lb whole chicken considerably. Add all the ingredients like shallots, soy sauce, fish sauce, garlic, red pepper flakes, sugar and salt to the pan. Leave 2 tbs of lemongrass to add it after the whole chicken is nicely cooked. Now add the whole chicken and mix the marinade thoroughly. Let the marinade seep into the slits and openings of the chicken amply! This Thai recipe requires a few hours of cooking, because the marination period is supposed to be over 3 hours. Keep it in the refrigerator for cooling and marinating for the same duration. After about 3 hours time, bring the marinated chicken to room temperature before it is cooked. Meanwhile, preheat the oven at about 350 degrees F. Place the whole chicken in a roasting pan and cook for about 40 minutes. Keep turning the chicken on its other side, so that both the sides are cooked well. You will see sugar melting from the chicken which would look all juicy and savory. Just about 10 minutes before the chicken is grilled and cooked, add the 2 tbs of lemongrass with 1 tablespoon vegetable oil and cilantro in the pan. Make sure you coat and spread the mixture evenly on the bird so that the taste it would bring out would be even more delicious. Once you are done spreading the mixture, keep the pan in the oven for further roasting. Let it sit for 10 minutes in the oven before you pull it out for carving.
Ga Xao Sa (Vietnamese Lemongrass Chicken)
Ga Xao Sa is a very refreshing, bright flavored and wonderfully light, Southeast Asian chicken recipe. This Vietnamese recipe is often found on the menu of any Vietnamese restaurants and food joints.
Ingredients
- 1 pound chicken (breast, thighs and boneless - skinless and cubed)
- 2 teaspoon cornstarch
- 3-4 stalks of lemongrass (white part minced)
- 1 teaspoon sugar and pepper
- 2 tablespoons fish sauce
- 2 tablespoons shallots (minced)
- 4 tablespoons vegetable oil (peanut or sesame)
- 2 cloves garlic (minced)
- 1 red bell pepper (chopped)
- cup of water
- 1 tablespoon caramelized sugar syrup
Take a large mixing bowl and mix all the ingredients in it, like cornstarch, sugar, fish sauce, 1 tablespoon of vegetable oil, cubed chicken and so on. Keep it for marination for about minimum 1 hour or maximum 8 hours. After a while when you are ready to cook the chicken, take a separate wok and pour 3 tablespoons of oil in it. Heat the wok with the oil in it, then add shallots and garlic to it and fry them until light brown in color. Next add the chopped bell pepper to the pan, stir it and fry it until it begins to wilt. This takes about 3-4 minutes. Then add the chicken marinade to the pan and continue to fry the entire mixture in the pan until the chicken is thoroughly cooked. Since the chicken was left for marination, it'll hardly take a while for it to get cooked. Once the whole mixture is fried, immediately reduce the high-heat to low or medium heat and pour in some water, some fish sauce and caramel syrup and leave it to simmer for 5 minutes. Lastly, add seasonings or steamed rice to this delicious medium-spicy lemongrass chicken recipe to garner a rich taste while consuming. Serve hot.
