Oven Kalua Pork
Ingredients
- 1 kg Pork, fat trimmed
- 4 tablespoons barbecue smoked seasoning
- 1 tablespoon salt
Preheat the oven to 350 C while you prepare the pork. Wash the pork thoroughly and rub the barbecue smoked seasoning all over it. Add the salt and wrap the pork tightly with aluminum foil. Bake the pork for around 5 hours and then check if the pork is fully done. Remove the foil from the pork and shred the mead with a fork. Serve the shredded pork meat in a platter along with pickled vegetables.
Lomi Lomi Salmon
Ingredients
- 12 pieces of salmon fillet
- 2 medium-sized tomatoes, diced
- cup onions, diced
- 3 tablespoons spring onions, chopped
- cup coarse sea salt
- 24 whole iceberg lettuce leaves
Take a zip lock bag and place the salmon fillets into it. Add salt and rub it thoroughly on the salmon fillets until they are evenly coated. Chill the salmon overnight in the refrigerator. Remove the salmon from the bag and wash it in running water. Take a bowl of ice-cold water and soak the salmon for two hours. Drain and pat dry the fish with a clean kitchen towel. Now dice the salmon fillets into small pieces and place them in a bowl. Add the diced onions, tomatoes and spring onions to the fish and mix them well. Take around two tablespoons of this fish mixture and place it carefully on the lettuce leaves. Because this dish is not too spicy, it is one of the best party food for kids.
Chicken Char Siu
Ingredients
- 12 chicken thighs
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon grated ginger
- 2 tablespoons hoisin sauce
- 2 garlic cloves, minced
- Cooking spray
In a small bowl, mix the soy sauce, hoisin sauce, honey, grated ginger and minced garlic and combine well. Add a bit of water if the marinade is too thick. Grease a baking tray with the cooking spray and place the chicken thighs on it. Pour the marinade over the chicken thighs and roast them in a moderately hot oven for 10 to 15 minutes. Turn the chicken thighs and roast them for another 10 to 15 minutes until it is cooked through and is golden brown in color.
