Summer Dinner Recipes


The summer season has arrived...with bright sunlight and warm evenings. The kids have their school vacations. It's a perfect time to try some new food recipes and get appreciation from your family members. In mid-summer, you will find a variety of fresh vegetables in the market. Barbecue Chicken Kabobs

Ingredients

4 skinless, boneless chicken breast halves - cubed
1 onion, cut into wedges
1 cup barbecue sauce
1 large green bell pepper, cut into 2 inch pieces
1 large red bell pepper, cut into 2 inch pieces

Preparation

Thread chicken, pieces of red bell pepper and green bell pepper and onion onto the skewers in an alternative manner. Before you start cooking, the grill grate should be lightly oiled. Then, place the kabobs on the preheated grill and apply barbecue sauce on the kabob pieces. Keep on turning and brushing the kabobs frequently. Cook for about 15 minutes, until the chicken juices run clear.

Summer Bean and Sweet Corn Salad

Ingredients

400g canned red kidney beans, drained and rinsed
1 punnet cherry tomatoes, halved
155g fresh or frozen sweet corn kernels
1 tsp lemon zest (optional)
1 small onion, diced
1 tbsp olive oil, or as needed
2 tbsp lime juice
Large bunch of fresh basil, finely chopped
Salt
Freshly ground black pepper to taste

Preparation

In a large mixing bowl, mix together beans, onion, sweet corn, tomatoes, lemon zest and lemon juice. Then, sprinkle with olive oil and add salt and pepper to taste. Mix it well. Before serving, add finely chopped fresh basil.

Chicken Pasta with Spinach and Tomato

Ingredients

1 (16 oz) package dry penne pasta
1 (14.5 oz) can chicken broth
4 (6 oz) skinless, boneless chicken breast halves - cut into 1 inch strips
10 cherry tomatoes, halved
1 (8 oz) package cold cream cheese, cubed
1 (10 oz) package frozen spinach, thawed and drained

Preparation

Add penne pasta to the boiling water in a big skillet. Meanwhile, cook the chicken pieces in chicken broth in a large pan over medium heat for about 10 minutes. Then, add cubes of cream cheese and spinach. Allow it to boil and cook for about 5 minutes. Keep stirring occasionally. Following this, you can add cherry tomatoes to this mixture and cook for an additional 3 minutes.

In a large mixing bowl, combine together cooked and drained pasta and the sauce prepared earlier. Allow this mixture to stand for a few minutes, before you serve it.

Raspberry Lemonade Punch

Ingredients

1 (12 fluid oz) can frozen raspberry lemonade concentrate
1 (12 fluid oz) can or bottle lemon-lime flavored carbonated beverage
3 cups water
1 cup crushed ice
tsp lime juice
1 cup fresh raspberries, garnish
1 cup fresh mint, garnish

Preparation

In a large punch bowl, mix together raspberry lemonade concentrate, lime juice and water. Then, add lemon-lime soda and crushed ice to this mixture. Pour raspberry lemonade punch in the serving glass and garnish with fresh mint leaves and raspberries.
