You must have had a white sauce with pasta dishes when dining at pure Italian restaurants. This white sauce is called alfredo sauce. As earlier stated, alfredo belongs to the Italian cuisine, however, many of its variations are made the world over, but very few are actually like the original alfredo sauce. One of the interesting facts of alfredo sauce is that earlier only cheese would be added to thicken it! However, nowadays health conscious people cannot afford so many calories just in a sauce, so instead of cheese, alfredo sauce is now thickened with starch.
Alfredo Sauce with Heavy Cream
Ingredients
- 2 tbs grated Parmesan cheese, for seasoning
- cup grated Romano cheese
- cup grated Parmesan cheese
- 1 pinch ground nutmeg
- 1 egg yolk
- 8 fluid ounces heavy whipping cream
- Salt to taste
- 3 tbs butter
Take a medium-sized saucepan and melt butter or margarine in it, over medium heat. When the butter starts melting, add heavy cream and stir constantly. Add in nutmeg, Parmesan cheese, salt and grated Romano cheese, stir until melted. When completely melted, add egg yolk and simmer for about 3-5 minutes, over medium to low heat. After the required time, bring down from the heat and garnish with additional grated Parmesan cheese, if desired.
Alfredo Sauce using Milk
Ingredients
- 3 cups milk
- 1-2 cloves garlic (mashed)
- tsp pepper
- cup Parmesan cheese
- 1 tbs butter
- tsp salt
- cup flour
Take a medium-sized heavy saucepan, melt butter in it over medium heat. When butter melts completely, remove the pan from heat and stir flour into it. Stir well and add half the milk to it and stir until a very smooth mixture is formed. Keep stirring and adding milk until you have added all the milk. When you are done with it, add Parmesan cheese, salt, garlic and pepper to it, mix well. Cook this mixture on medium heat, until desired thickness. Remember the sauce will thicken afterward.
Classic Alfredo Sauce Recipe
Ingredients
- cup freshly shredded Parmesan cheese
- Freshly chopped parsley
- cup cold salted butter
- Salt and white pepper to taste
- 2 cups heavy cream
Take a saucepan and add cold water to it, do not fill to the brim, just to cover the bottom of the saucepan. Start heating the saucepan over high heat, until water starts evaporating, remove quickly from heat when few drops are left. Add cream to the saucepan and start heating again, bring to a boil and lower the heat, continue cooking until cream is reduced to half. When done, remove it from heat and gradually add butter. Blend well until cream is thickened and then add cheese, in small portions. Stir constantly with the help of a wooden spoon, until completely blended. Add salt to taste.
Alfredo Sauce without Cream Cheese
Ingredients
- cup sherry or white wine
- 3 tbs fresh or 1-2 tbs dried parsley
- 4 tbs flour
- 1 cup milk
- 1 cup shredded Italian cheeses (Mozzarella, Romano, etc.)
- cup Parmesano Reggiano cheese
- Salt and pepper
- 4-5 cloves garlic, minced
- tsp fresh nutmeg
- 1 cup chicken broth
- 4 tbs butter
Take a saucepan and melt butter in it over medium heat. When butter melts, add flour. Mix well and cook for about 2-3 minutes, stir constantly so that the flour gets cooked. Now add broth and milk together and blend well. When well blended, add all the remaining ingredients and stir until the sauce is smooth and cheese melted.
