Chorizo is nothing but any sausage made from pork. This cuisine has originated in lberia and Iberia is a region that includes states like Spain and Portugal. Homemade Recipes for Chorizo Sausage

Recipe 1: Using Tequila

Ingredients
  • Ground pork - 2 pounds
  • Large dried New Mexico chilies - 3
  • Small dried chilies - 4
  • Boiling water - cup
  • Garlic cloves (minced) - 8
  • Dry oregano leaves - 2 tablespoons
  • Ground cumin - 2 teaspoons
  • Fresh ground black pepper - 1 teaspoon
  • Dark brown sugar - 1 teaspoon
  • Cider vinegar - 4 tablespoons
  • Tequila - 2 tablespoons
  • Salt - 3 teaspoons
Procedure

To prepare these chorizo sausage recipe, first break Mexico chilies into pieces and combine them with small dried chilies in a bowl. Then pour the boiling water over these chilies and leave them to become soft. Pour these chilies along with the liquid into a food processor. Add oregano, cumin, black pepper, vinegar, tequila, salt, garlic and sugar to it and then grind the mixture to attain a smooth texture. Transfer the ground pork and the liquid mixture into a large bowl and blend the mixture with help of an electric mixer. Take a container or a sausage cast and transfer this mixture into it. Place the container in the refrigerator and let it set properly.

Ingredients
  • White vinegar - cup
  • Sausage casing - 1
  • Garlic cloves (crushed) - 6
  • Salt - 2 teaspoons
  • Pork lean (coarse grind) - 2 pounds
  • Ground cumin - 1 teaspoon
  • Finely chopped pork fat - pound
  • Black pepper - 1 teaspoon
  • Cinnamon ground - teaspoon
  • Cloves ground - teaspoon
  • Coriander ground - ground
  • Ginger (grated) - teaspoon
  • Oregano (dried, crushed) - 1
  • Paprika - 2 tablespoons
  • Chili powder - 2 tablespoons
  • Brandy - cup
Procedure

Take a large mixing bowl and add pork meat and fat in it. Mix them properly and then add pepper, cinnamon, coriander, oregano, garlic, salt, chili powder, paprika, cumin, vinegar, ginger and brandy. Combine the ingredients with hands and then store the mixture into sausage casing. Hang the casing in a dry and cool place.

Recipe 3: Using Dry Red Wine

Ingredients
  • Ground beef - 2 pounds
  • Ground pork - 1 pound
  • Chili powder
  • Dried oregano - teaspoon
  • Garlic cloves (minced) - 3
  • Salt - 2 teaspoons
  • Dry red wine - cup
  • White vinegar - cup
Procedure

To prepare this easy chorizo sausage recipe, take a large bowl and combine ground beef, ground pork, garlic, salt, red wine, vinegar, chili powder and oregano.
