Enchilada Sauce Recipe


A classic example of Mexican cuisine, enchiladas are now available in different types. They vary with the filling and the different types of sauces used with it. Enchiladas are served with many different types of sauces, but, the traditional red enchilada sauce is one of the most popular ones. Even though, you may go for store-bought versions of this sauce, homemade ones are always preferred.

Red Enchilada Sauce Recipe

As mentioned above, red enchilada sauce that is made of tomatoes and dry chili peppers are among the most popular traditional sauces used with enchiladas. The following is an authentic recipe that can be used for preparing this sauce. The following are the ingredients needed for preparing this recipe.
  • Roma tomatoes - 2
  • Ancho chilies - 12
  • Chiles de arbol - 4
  • Chopped onion - 1 small
  • Garlic cloves - 2
  • Cumin seeds - 1/8 teaspoon
  • Mexican oregano - 1 teaspoon
  • Salt - as per taste
How to Prepare

Wash and dry the chilies beforehand. Remove the seeds and veins of the chilies. Take a pan and toast these chilies, along with the garlic, chopped tomatoes and onion, over medium heat. Make sure to stir continuously, so as to prevent burning of the contents. Toast the contents for around five minutes and remove from heat. The next step is to boil six cups of water in a pan and add toasted materials to it. Cook on medium heat for around fifteen minutes. Once done, allow the mixture to cool. The next step is to blend the mixture, along with cumin. Run the blender for around two minutes or till the mixture turns smooth. Now, you have to strain the mixture to a pan and cook the mixture on medium heat, for another fifteen minutes. Add the required amount of salt and serve with your favorite enchilada.

How to Make Green Enchilada Sauce

As the name rightly suggests, this sauce is made of green tomatoes and green peppers. You need the following ingredients for making this sauce.
  • Green tomatillos (fresh) - 1 pound
  • Jalapeno peppers (or serrano) - 4
  • Cilantro (fresh) - 1 bunch
  • White vinegar - 1 cup
  • Garlic cloves - 1
  • Lime - 1
  • Fresh parsley - 1 bunch
  • Water - 1 cup
  • Vegetable oil - 1 tablespoon
  • Spanish onion (yellow/white) - 1 medium
  • Cinnamon - 1 pinch
  • Nutmeg - 1 pinch
  • Sugar - 1 pinch
  • Salt and pepper - 1 teaspoon each
How to Prepare

In order to prepare this green enchilada sauce recipe from scratch, wash and peel the tomatillos. Soak them in cold water for at least ten to twelve minutes. Puree the tomatillos with water, in a blender. Once done, add the peppers, juice of the lime, vinegar, garlic, onion and a handful of cilantro and parsley to the paste and blend them once again. Run the blender, till a smooth paste is formed. You may find some tomatillo seeds in the mixture. Now, add cinnamon, nutmeg, sugar, pepper and salt. Transfer the sauce to a pan and cook on low heat for around 30 to 40 minutes. Your sauce is ready for use.
