The other day we had guests at home when we ran out of mayonnaise. Whoa! It was such a disaster, imagine tuna salad and potato wedges without mayo. It wasn't feasible for any of us to rush to a supermarket and get the sauce. However, within no time there was a bowl full of mayo on the table! To my surprise it was grandma, who actually made it at home. And now, you would be surprised to know it tasted way better than store-bought mayonnaise. Making your own mayonnaise sauce will let you have flavors or combinations of your choice, moreover you will be able to avoid processed food as well, which is a healthy option of course! It is simple to make mayonnaise at home and you don't need to buy anything specifically from the market because you are most likely to have the ingredients required on your kitchen shelf. There are two ways you can make this sauce; you either use a blender, or a food processor to whisk the sauce, or you simply beat the sauce using a fork. It doesn't make any difference to the taste, whatever method you use. It just tastes amazing and absolutely divine. So, here you go...
Steps To Make Mayonnaise
You Will Need...
- 2-3 eggs
- 1 tablespoon freshly ground mustard seeds
- 1 cup olive oil
- 1-2 tablespoon white wine vinegar or cider vinegar
- Pinch of salt
Step 1
Crack the eggs in a big mixing bowl. While you do so make sure you put in only the yolks. Add a pinch of salt and a tablespoon of powdered mustard seeds. Now, whisk them together until the mixture reaches a thick and glossy consistency.
Step 2
The next step is to add oil, I have used olive oil here, you can use groundnut or vegetable oil, whichever is preferred. Walnut oil is also a good option. It is important to add oil drop by drop. If you add all the oil at once, there is every possibility that the sauce can curdle. If you are using a blender keep it running while you add oil and in case you are using a fork keep whisking it when adding oil.
Step 3
Add lemon juice or white vinegar to the mixture. Lemon juice or white vinegar gives the sauce the required acidity and flavor. Depending on how tangy you like the sauce vary the quantity of the same. Now, while you are adding ingredients, keep whisking it constantly.
Step 4
This happens to be the basics of making mayo sauce. After this you add variety of herbs and spices to give the sauce a personalized touch. You can add garlic cloves, freshly ground pepper (tastes amazing), oregano, basil to enhance the taste of mayo sauce. You can even add fruit juices like pomegranate, orange, or cranberry to make your sauce interesting.
Step 5
Keep the blender running or your arms whisking the sauce, to achieve the thick creamy consistency. In case you like the sauce in its thinner form, just add a little water and whisk to decrease its viscosity. A little vanilla essence or any other flavor of your choice added to the mixture will make your mayonnaise sauce smell good, it is optional and you can enjoy the sauce plain as well.
Step 6
Once you have achieved the required consistency, fill the sauce in a glass jar and refrigerate it. This is to increase its shelf life and also keep the sauce fresh. A homemade sauce can stay fresh and eatable up to a week or two. It indeed is a healthy option!
You can also try egg white to make mayonnaise sauce as it proves to be much more healthier and tastes good as well. If you like the mayo sauce a little sweet add a teaspoon of sugar to reduce the tangy flavor of the sauce. Do remember to whisk the mixture constantly to attain that thick, creamy and glossy consistency! Enjoy!
