Asparagus Sauce Recipes


Asparagus is one of the flowering plants which is eaten as a vegetable, almost all over the world. One of the reasons that has made asparagus quite popular among people is because of the numerous health benefits that this vegetable provides. Asparagus is a good source of vitamins A, C, E, K as well as folic acid, potassium, selenium, iron, niacin, etc. Moreover, it is also considered to have a lot of medicinal properties in it. Usually, asparagus is consumed by baking, grilling, steaming as well as smoking it, dipped in a variety of sauces. However, not many people know that this sauce is served as a dip for various dishes. It tastes delicious with dishes made of fish, poultry and meat. One can also have this sauce by pouring it over vegetables as well as cooked asparagus. Let us take a look at some of its recipes.

The best thing about these sauces is that they can be made by taking some leftover asparagus. Here are some easy to make and yummy to taste recipes.

Asparagus Creamy Sauce

Ingredients
  • 8 ounces asparagus, cooked
  • 2 garlic cloves, finely chopped
  • 1 pinch mace
  • onion- finely chopped
  • 8 ounces double cream
  • Salt and fresh ground black pepper- to taste
Preparation

The first step is to soften the onion and garlic. For this, heat a little olive oil in a pan and saute the garlic and onions till they become transparent. Once this is done, transfer them into the blender and add the cooked asparagus to it. Put in the mace, salt and pepper into the blender and blend till all the ingredients turn into a smooth paste. Transfer these ingredients into a bowl and slowly add the double cream into it, till it gets the consistency of a sauce. This is a good sauce for chicken dishes.

Asparagus Pasta Sauce

Ingredients
  • 1 lb fresh asparagus
  • 1 lb pasta (your choice)
  • 4 ounces Parmesan cheese, grated
  • 1 teaspoon fresh lemon zest, finely grated
  • cup extra virgin olive oil
Preparation

Trim the tough ends of the asparagus and chop them into - 1 inch pieces. However, remember to separate the tips of the asparagus before doing this. While you are chopping the asparagus stems, take 5-6 quarts of water in a vessel and bring it to boil. When the water begins to boil very rapidly, add the asparagus stems into it along with 2 tablespoons of salt. Cook the asparagus till it becomes very tender (approximately 6-8 minutes). Take the asparagus out of the vessel without draining the water and put them in the colander. Place the asparagus under cold running water and drain them well. After this is done, cook the tips of the asparagus in the same boiling water for at least 3-5 minutes. The same procedure which is done to the asparagus stems after cooking, should be repeated with the asparagus tips. Once this is done, place asparagus stems, lemon zest, and oil in a blender. Add cup of water in which the asparagus was cooked into it and blend till all the ingredients are fully pureed. Transfer the sauce to a saucepan and set aside. Meanwhile, cook the pasta in the water in which the asparagus was cooked. However, make sure that you do not cook the pasta for more than of the cooking time mentioned in the package. Drain the pasta, however, save at least 2 cups of water in which it is cooked. Once the pasta is completely drained, place it in the saucepan containing the sauce and add asparagus tips and cup of boiling water. Cook these ingredients on a high heat, stirring continuously till the pasta is completely coated with the sauce. Add some cheese to it and cook till the cheese is completely melted.

Asparagus Cheese Sauce

Ingredients
  • 20 stalks asparagus, cooked
  • 3 tablespoons butter
  • teaspoon celery salt
  • 1 teaspoon onion, finely chopped
  • 4 pieces hot buttered toast
  • 2 cups milk
  • teaspoon paprika
  • 4 tablespoons flour
  • teaspoon salt
  • cup cheddar cheese
Preparation

In a saucepan, take butter and heat on a medium to low heat. When the butter melts completely, add flour followed by milk and cook till it reaches the consistency of a sauce. Add onions, celery salt, paprika and cheese into it. Cook the sauce till the cheese is completely melted. Place the asparagus on a platter which has hot buttered toast and serve by pouring the cheese sauce over it.
