Butter Sauce for Pasta


Pasta is an integral part of Italian cuisine and is made from the dough of flour and water as well as from flour and egg. It is also referred to the dishes which are made using different types of pastas. It is said that pastas are available in 600 shapes and sizes, from which the most popular ones are the spaghetti, lasagna and macaroni.

Though it is the traditional food of Italy, pasta has been adopted by several cuisines of the world. The pasta is first cooked in boiled water and then eaten by adding some type of sauce to it. People also add vegetables, meat as well as sausages to the pasta to make it more delicious. One of the sauces that is used with pasta is the butter sauce. Let us take a look at the different ways of making pasta with butter sauce.

Pasta Preparations With Butter Sauce

Preparation 1

Ingredients
  • 4 ounces butter, softened
  • 3-4 tablespoons evaporated milk
  • 2 tablespoons Parmesan cheese
  • 4 ounces margarine, softened
  • 3 pinches cayenne
  • 1 tablespoon flour
  • tablespoon garlic powder
  • Salt and pepper - as per taste
Directions

Take butter and margarine in a bowl and blend them together by adding flour to it. Using a hand mixer will make the task easier. Place a pan on low heat and add the butter and margarine mixture into it. When it starts melting, add the garlic powder, milk, cayenne, salt and pepper to the pan. If the sauce becomes too thick, add a little more milk, but see to it that it does not become too thin. Put in the Parmesan cheese and then mix the whole thing with the pasta of your choice.

Preparation 2

Ingredients
  • 8 ounces spaghetti
  • 2 cloves garlic, minced
  • 2 tablespoons Parmesan cheese
  • 1/3 cup butter or olive oil
  • teaspoon dried parsley
  • salt and ground pepper - to taste
Directions

Cook the pasta (spaghetti) according to the directions given in the packet. When fully cooked, drain the excess water and spread it on a flat dish. Heat butter or olive oil in a sauce pan and fry garlic in it. When the garlic turns a little brown, add the cooked pasta in the pan and mix well. This should be followed by salt, ground pepper and parsley. Transfer the pasta in a bowl and serve by sprinkling Parmesan cheese over it.

Preparation 3

Ingredients
  • 4 tablespoons of butter
  • 8 ounces heavy cream
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • teaspoon nutmeg
  • 2 tablespoons lemon juice
  • Zest of lemon
  • teaspoon pepper
  • 8 ounces Parmesan cheese
Directions

Heat butter in a skillet and when the butter melts completely, add lemon zest and garlic to it. Fry on a medium to low heat for a few minutes and when it starts emitting a flavor, add the ingredients like nutmeg, cream, pepper and salt. Stir once and allow it to heat thoroughly. When it is fully cooked, add the lemon juice and 4 ounces, i.e. cup of Parmesan cheese. Pour this sauce to the pasta that you have cooked and sprinkle the remaining 4 ounces of cheese over it. This sauce will go well with fettuccine and linguine.

Preparation 4

Ingredients
  • 1/3 cup butter, chopped
  • 2 tablespoons parsley, chopped
  • 16 ounces mushroom
  • 2 cloves garlic, minced
  • 2 tablespoons Parmesan cheese
  • 2 tablespoons heavy cream
  • Salt and pepper - as per taste
Directions

Heat butter in a saucepan on a medium flame and when it starts melting add the garlic and fry for a minute or so. Put in the mushrooms and stir so that all the pieces are coated with butter. Increase the flame when the mushrooms begin to leave water. Cook for 25-30 minutes, stirring frequently in a medium to low heat. Add the parsley and the heavy cream to the mushrooms and continue stirring till it begins to thicken. This may not take more than 3-5 minutes. Add the salt and pepper and pour the sauce over cooked pasta. Top it with Parmesan cheese and serve.
