Parsley Sauce


Parsley is a herb that is used for culinary purposes by people across the world. Many doctors recommend the consumption of parsley, because it has various health benefits. It is said that parsley contains a high amount of vitamin C, which is even more than oranges. Apart from vitamin C, parsley possess calcium, potassium, manganese, etc. Parsley is also considered to be best for people who have health problems like rheumatism, kidney stones, menstrual insufficiency, etc. However, though the parsley health benefits are so high, parsley is mostly used by people for garnishing soups, salads and other dishes. One reason for this is that not many people are aware of its medicinal abilities. However, there are various parsley recipes with which one can not only make delicious dishes, but also take in its essential vitamins and minerals. One such dish is the parsley sauce which is one of the main part of the traditional British food. Making Sauces from Parsley
It can be made in various ways and is usually eaten with fish, chicken and other meat dishes. It has the ability of adding a delicious taste to the meat or whatever food you are mixing it with. So, if you want to try making this easy to make sauces, take a look at some of the recipes.

Basic Recipe

Ingredients
  • 4 heaped tablespoon fresh parsley, finely chopped
  • 1 slice onion
  • 1 ounces butter
  • 1 bay leaf
  • 1 teaspoon lemon juice
  • 15 fl ounces milk
  • 10 whole black peppercorns
  • 3 teaspoons single cream
  • 1 blade of mace
  • ounce plain flour
  • A few parsley stalks
  • Salt and black pepper- to taste
Preparation

Take a small saucepan and add milk, parsley stalks, bay leaf, onion slice and mace into it. Place the saucepan on the stove and heat it slowly on a low heat. When the mixture starts simmering, take it off from the stove and transfer the whole thing into a bowl. Set aside till the mixture cools completely. Once the mixture becomes fully cold, pour the mixture back into the pan through the strainer, so that you can discard all the flavorings added to it. After this is done, add butter and flour to the flavored milk and again heat it in the stove at a medium heat. Do not forget to stir the mixture continuously, so that lumps are not formed in it. When the mixture starts simmering, lower the flame and allow the mixture to cook for five more minutes or till you receive the right consistency. Add chopped parsley, lemon juice, cream, salt and pepper to it and serve it with cooked fish.

Special Sauce for Chicken

Ingredients
  • 1 whole chicken breast, split
  • lemon
  • 2 tablespoons parsley, chopped
  • 2 tablespoons butter
  • Salt and freshly ground pepper- to taste
Preparation

Take butter in a small saucepan and melt it by keeping it on the stove. Take the chicken breast in a baking dish and sprinkle it with salt and pepper and pour half of the melted butter over it. Place this baking dish in a 450 degrees F, preheated oven and bake for 25-30 minutes or till it becomes crisp and golden brown. Once this is done, transfer the baked chicken into a serving platter and pour the remaining melted butter and the lemon juice and mix with the ones left in the pan after baking the chicken. Add parsley, salt and pepper to this and pour the whole thing over the chicken, before serving.

Special Sauce for Steak

Ingredients
  • cup fresh Italian parsley, chopped
  • cup distilled white vinegar
  • 4 bay leaves
  • cup fresh oregano, chopped
  • 1 flank steak
  • 2 jalapenos, roughly chopped
  • cup cilantro, freshly chopped
  • 4 cloves garlic
  • cup extra virgin oil
  • Salt and pepper- to taste
Preparation

The first step would be to preheat a grill on high temperature. Take jalapenos, vinegar, bay leaves and garlic in a blender and blend till all these ingredients become smooth. When this is done, transfer the puree into a bowl and add cilantro, oregano and parsley into it. Pour olive oil to it and sprinkle salt and pepper to it. Mix well with a spoon and keep it aside. Once this is done, take the flank steak and season it with salt, olive oil and pepper. Place the steak in the grill and grill it for 2-3 minutes each side. After the steak is fully grilled, take it out and slice it very thinly. Place it on a serving dish and serve it with the sauce which is already prepared.
