Scalloped Corn Recipe


Scalloped corn is a baked dish made in a casserole by mixing together corn kernels with milk and eggs. It is a great side dish that was traditionally served during thanksgiving and it nicely balances the main course made of meat and turkey. Making scalloped corn does not require too much effort as all you need to do is to mix the ingredients and pop it in the oven, you can carry on making the main course while the side dish of scalloped corn is baking in the oven.

Easy Scalloped Corn
Ingredients
  • 1 can creamed corn
  • 2 cups corn kernels
  • cup sour cream
  • cup plain unsalted butter
  • 2 tablespoons sugar
  • 2 eggs
  • 1 packet corn muffin mix
Method

Grease a shallow baking dish with butter and keep it aside. In a large bowl, crack the two eggs and add the sour cream, creamed corn and butter. Use a spoon to beat this mixture together until everything is well combined. Now add the sugar and corn kernels along with the corn muffin mix and combine well. Pour this mixture into the greased baking dish and bake in a moderately hot oven for 35 to 40 minutes. To check if the scalloped corn is done insert a knife and if it comes out clean, the dish is cooked.

Scalloped Corn with Crackers
Ingredients
  • 4 cups fresh corn kernels
  • 1 small onion, finely chopped
  • 3 tablespoons butter, melted
  • 1 cup crackers, crushed
  • 1 tablespoon sugar
  • 3 eggs
  • 1 cup skimmed milk
  • 1 teaspoon salt
  • teaspoon freshly ground pepper
Method

In a large bowl, combine the eggs, corn kernels, milk, melted butter and cups crackers. Add the chopped onions, sugar, salt and freshly ground pepper. Pour this mixture into a greased shallow baking dish and sprinkle the rest of the crushed crackers on top. Bake this in a moderately hot oven for about 45 minutes until the top becomes golden brown in color.

Crock Pot Scalloped Corn Recipe
Ingredients
  • 3 large eggs
  • 2 cups frozen creamed corn, thawed
  • 4 tablespoons minced onion
  • 1 cup coarsely crushed cracker crumbs
  • 1 cup half and half
  • teaspoon pepper
  • 1 tablespoon sugar
  • teaspoon salt
Method

With the help of an electric mixer whisk in the milk and eggs together until it is light and frothy. Now add the corn kernels, crushed crackers, half and half, sugar, salt and pepper. Mix all the ingredients well and pour it into a lightly greased casserole. Place the casserole inside the crock pot and slow cook for 2 to 3 hours in medium heat. When the top of the casserole turns golden brown, remove from heat and allow it to cool before serving.

Scalloped Corn with Cornbread
Ingredients
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 3 cups corn kernels
  • 1 egg
  • cup bread crumbs
  • 1 green bell pepper, finely chopped
  • 1 cup milk
  • 1 teaspoon sugar
  • 1 tablespoon melted butter
  • teaspoon salt
  • teaspoon pepper
Method

In a saucepan melt butter over low heat and then stir in the flour. cook for about 2 to 3 minutes stirring continuously. Gradually stir in the milk and continue simmering it over low heat until the mixture begins to thicken. Add salt and pepper. Pour around 2 tablespoons of the sauce to the beaten egg, stirring well. Add the egg mixture back into the sauce in the saucepan. Now add the corn kernels, chopped green pepper and sugar to the sauce mixture. Pour mixture into a greased casserole and sprinkle with buttered bread crumbs and paprika. Bake it in an oven at 350C until the top of the scalloped corn has browned.

Scalloped Corn and Oyster Recipe

Ingredients
  • 1 can cream style corn
  • 1 cup cracker crumbs
  • 1 can oyster stew
  • cup chopped celery
  • 1 egg
  • 1 cup milk
  • 2 tablespoons melted butter
  • teaspoon chopped pimento
Method

In a large pan or bowl, combine creamed corn, oyster stew, egg, cracker crumbs, milk, pimento and celery. Pour this mixture into a greased casserole dish and sprinkle additional cracker crumbs and butter over it. Bake in a moderately hot oven for 40 to 45 minutes.

They make a great holiday food and adults as well as kids enjoy having this dish. You can easily adjust the amount of ingredients to prepare the dish for a large crowd.
