Shawarma Sauce


Shawarma is a famous bread meat sandwich from the middle-east. Originated in Turkey it is famous primarily in Arab countries. The meat used in a shawarma can be of lamb, beef, goat, chicken or sometimes even a mix. The meat used in the sandwich is stationed on a spit and is heated or grilled the whole day. Shawarma meat sandwiches are consumed with taboon bread, pita bread and tabouli. An ideal accompaniment to this mouth-watering sandwich is the delicious shawarma sauce.

How to make Shawarma Sauce

If you are a fan of middle eastern cuisine, you must have eaten a shawarma. The delicious grilled meat is cradled in bread of your choice. Shawarma is incomplete if it doesn't have a sauce to go with it. Lemon juice and cumin seeds are one of the most common shawarma sauce ingredients.

Tarator Sauce
Ingredients
  • 1 cup tahini
  • 1 cup lemon juice
  • 3 crushed garlic cloves
  • tsp salt
  • tsp finely chopped parsley
  • 2 tbsp water
  • Dash of cumin
Method
In a food processor, add tahini, chopped garlic, lemon juice, salt and cumin together. Mix well and add water. Remove this mixture in a bowl and add parsley. Stir well. Serve immediately, or store in an air tight container in a refrigerator.

Tahini Sauce
Ingredients
  • 150g tahini paste
  • cup flat leaf parsley chopped
  • tsp ground cumin
  • 2 tsp white vinegar
  • Juice of 1 lemon
  • 1 garlic clove crushed
  • Paprika to serve
Method
Add garlic, tahini and vinegar in a bowl. Add lemon juice and cup water, so that a creamy sauce mixture is formed. Serve chilled, sprinkle it with paprika.

Falafel Hot Sauce
Ingredients
  • 2 cups of canned tomatoes
  • 3 garlic cloves, finely chopped
  • 1 tsp brown sugar
  • 1 tbsp finely chopped parsley
  • 1 tsp chili sauce to taste
  • Juice of 1 lemon
  • Salt to taste
Method
Add all these ingredients in a sauce pan, bring it to a boil, and keep it covered for 30 minutes till the tomatoes break up. Add salt according to your taste and then let it cool.

Chicken Shawarma Sauce Recipe
Ingredients for Shawarma
  • cup lemon juice
  • cup chopped coriander
  • 2 tbsp olive oil
  • 1 tbsp ground coriander
  • 2 tsp sumac
  • 2 tsp ground allspice
  • 1 red onion, sliced thinly
  • 6 white Lebanese bread, warmed
  • cornichons, sliced kalamata olives, baby cos lettuce leaves and sliced tomatoes
  • 1 lbs boneless, skinless chicken thighs or breasts (thinly cut)
Ingredients for Garlic Shawarma Sauce
  • cup olive oil
  • cup sunflower oil
  • lemon juice
  • 8 cloves garlic
  • 2 tsp salt
Preparation
  1. Add lemon juice, spices, oil, salt and coriander in a large bowl add chicken and mix well.
  2. Heat both sides of chicken, on a barbecue grill or in a grill pan over medium high heat for 10 minutes.
  3. in the meanwhile make garlic shawarma sauce, blend garlic, salt and lemon juice until it is smooth. Slowly add both the oils while the motor is running. Blend until the sauce is thickened.
  4. Add the thinly sliced onion in a small bowl with sumac.
  5. To give the final touches, place warm bread on a sheet of aluminum foil. Add lettuce, tomato, onion mix, pickles, olives and coriander. Place chicken on top. Cut it in half and serve it with the delicious garlic shawarma sauce.
