Barbecued Fish

Ingredients
  • 4 skinless pomfret
  • 6 dried Kashmiri chillies
  • 2 chopped onions
  • 2 teaspoon of tamarind pulp
  • 1 teaspoon of cumin seeds
  • 1/2 teaspoon of turmeric
  • 1 teaspoon of black peppercorns
  • 2 cloves of chopped garlic
  • teaspoon of sugar
  • 1 tablespoon of cider vinegar
  • Rice flour for dusting
Method of Preparation
  • Before starting the actual recipe, you need to soak the chillies in warm water for around 10 minutes. Drain the water and remove the seeds from chillies.
  • Put the chillies, tamarind, cumin seeds, turmeric, peppercorns, garlic, onion, sugar and vinegar in a fine mixer (food processor) and blend until smooth. Add salt to taste.
  • Spread this spice paste on both the sides of the pomfret fillet, dust with rice flour.
  • These pomfret fillets can be cooked on a barbecue or a preheated grill for 1-2 minutes on both sides.

Method of Preparation
  • If you wish to cook the potatoes directly on the barbecue or the bonfire, you need to wash and wrap them in foils individually. Cook them in the barbecue for 1-1 hours.
  • Other ways, in order to save them, you can precook them in an oven or a microwave till properly baked. These semi cooked potatoes can be grilled on the barbecue until crisp!
  • Scoop out the potato and fill filling of your choice in the potato. Cheese and bacon, baked beans and grated cheese, cream cheese, scrambled egg, etc. make up excellent filling.
