Quesadilla is a Mexican delicacy, prepared of cheese folded inside of corn or wheat tortilla. Though quesadilla is a Mexican food, it has got its name from a Spanish word meaning 'cheesy tortilla'.   • cup mayonnaise
  • 2 tsp minced jalapeno slices (nacho slices)
  • 2 tsp juice from jalapeno slices (nacho slices)
  • tsp sugar
  • tsp paprika
  • tsp cumin
  • tsp cayenne pepper
  • tsp garlic powder
  • A dash salt
Preparation

Take a mixing bowl and combine all ingredients. Cover and refrigerate overnight. Use one tbsp of this sauce per one tortilla quesadilla.

Low Fat Taco Bell Quesadilla Sauce

Ingredients
  • cup fat-free mayonnaise
  • 2 tsp minced jalapenos
  • 2 tsp jalapeno juice
  • tsp sugar
  • tsp cumin
  • tsp paprika
  • tsp cayenne pepper
  • tsp salt
Directions

In a large mixing bowl, combine all the ingredients well. Cover and refrigerate overnight. Use one tbsp of this sauce per one tortilla quesadilla.

Chicken Quesadilla Sauce

Ingredients
  • cup mayonnaise
  • 2 tsp jalapeno juice, from minced jalapenos
  • tsp sugar
  • tsp cumin
  • tsp cayenne pepper
  • tsp garlic powder
  • 2 chicken breasts
  • Cheddar Cheese
  • Monterey Jack Cheese
  • Tortillas
Directions

Cook the chicken either by boiling for 20 minutes or grilling for about 30 minutes. Take a bowl and combine mayonnaise, jalapeno juice, sugar, cumin, cayenne pepper, and garlic powder. Cover and refrigerate. In another bowl, shred both cheddar and Monterey Jack cheeses, and mix well. Take a skillet and heat a bit of butter or olive oil in it. Fold the flour tortilla in half and put chicken and cheese on one side. Transfer the tortilla in the skillet and drip the sauce on the empty side. Press together with a spatula, until the cheese melts and then flip to the other side. Serve the prepared chicken quesadilla with the remaining sauce and enjoy.
