Chicken Casserole Recipes


Chicken casseroles are easy to make and also make a whole lunch or dinner. You could either have it cold or just warm for few minutes in a microwave. There are umpteen different chicken casserole recipes that could be made in a jiffy. Believe me, kids would love it.

Broccoli and Mushroom Chicken Casserole

This is a delicious and simple recipe, which is nutritious and healthy.

Ingredients

4-6 pieces of chicken breast (boneless)
2 cups fresh broccoli florets
1 cup sliced mushrooms
1-cup fresh cream
11/2 cups of cream of mushroom soup
cup cheddar cheese
cup parmesan/ mozzarella cheese
1-cup breadcrumbs
1 tbsp crushed garlic/powdered garlic
1 onion finely chopped.
2 tsp butter

Salt and pepper as per your requirement

Method

In a skillet add a 2 tsp of butter and saut the chicken breasts till they become tender. Layer the casserole with chicken pieces. Add the remaining butter and saut onions, garlic and mushroom for a minute or till the onion changes color. Arrange the broccoli on the edges of the casserole and in the center, place the sauted mushrooms and onion. Blend the cream and chicken soup and pour it over the chicken. Sprinkle salt and pepper to your taste. Add cheddar cheese over it followed by breadcrumbs. Parmesan or mozzarella cheese can be used instead of cheddar cheese.

Bake it in a preheated oven for 30-35 minutes at 360 degree Celsius or till the cheese melts and turns golden brown.

Options: Instead of breadcrumbs you could use cracker crumbs. The cheddar cheese could be replaced with cottage cheese. Sauting chicken and vegetables would reduce the baking time. This recipe could be served for 4 to 6 people.

Macaroni Chicken Casserole

One of the best ways to make use of leftover chicken and vegetables is by preparing a simple yet mouth-watering macaroni chicken casserole. You could serve it either cold or hot, with crusty bread slices or biscuits. It could also make a whole meal.

Ingredients

3 cups cooked chicken (boneless and diced)
2 cups chicken broth
cup sliced green onions
1 cup sliced mushroom
1 cup blanched spinach (squeeze excess water)
1-cup milk
1/3-cup all-purpose flour
2 cups shredded cheddar cheese
cup breadcrumbs
2 cups cooked and drained macaroni
6 tbsp butter
Salt and pepper

Method

Heat 5 tbsp butter in a skillet and saut onion and mushrooms stirring frequently till mushroom becomes soft and tender. Reduce the flame and cook it for a minute more. Add the all-purpose flour and stir until it blends well with the vegetables. Stir in chicken broth and cook till the gravy thickens. Slowly drop in the chicken and blanched spinach. Pour the milk and add the cheese and mix well. Sprinkle salt and pepper and stir well. Slowly add the cooked macaroni and mix well until it blends well with the remaining ingredient.

Butter a baking dish with 1 tbsp butter and spoon the above contents into it. Bake the casserole in a pre-heated oven for 25 to 30 minutes at 350 degree Celsius.

Chicken casseroles are not only a healthy meal but also filling, you could refrigerate it for couple of days in an air-tight microwave container.
