German Potato Salad Recipes


German potato salad is basically a modified version of the original 'Kartoffelsalat', which is a German dish. It is prepared in different ways in different regions of Germany. In south Germany, it is served slightly hot and is made using finely chopped onions and a typical Bavarian type of vinaigrette. Though it is named as German potato salad, it is prepared using different regional recipes around the world.

Authentic German Potato Salad

Ingredients
  • 3 Cups of potato (peeled and diced)
  • 1 small onion (diced)
  • 4 Slices of bacon
  • 2 tablespoons of water
  • 3 tablespoons of sugar
  • 1/4 cup of vinegar
  • Salt as per taste
  • Ground black pepper
  • Fresh Parsley (chopped)
Directions
Cover the potatoes in a pot with water. Cook until fork-tender. Drain all the water out and keep aside for cooling. Fry the bacon in a large frying pan over medium flame, until crisp. Keep it aside. Mix chopped onion to the bacon, grease and cook it until brown in color. Add water, sugar, vinegar, salt and pepper to it. Bring this mixture to boil and then add the cooked potato and chopped parsley to it. Crumble the bacon in half while heating thoroughly. Transfer this mixture in a serving dish and crumble the remaining bacon on top. Serve when warm.

Serving
This dish serves 4 people.

Berlin Kartoffelsalat

Ingredients
  • 2 pounds of potatoes
  • 1 onion
  • 6 baby dill pickles
  • 1 medium apple
  • 6 tablespoons of pickle juice
  • 16 ounces of mayonnaise
  • 1/2 teaspoon of pepper
  • Salt (to taste)
  • 1 tablespoon of sugar
Directions
Chop the onion, pickles and apples in same size pieces. Boil the potatoes for about 20-30 minutes until tender. Let the potatoes cool. Peel before they get completely cool and dice into preferred size. Combine the diced onion, pickles, apple, pickle juice, mayonnaise, sugar, salt and pepper in a medium-sized bowl and mix it well. Take the diced potatoes in a large bowl, put the above mixture on it and stir well, taking care that the potatoes don't break. Cover the bowl with a plate and put it in a refrigerator for more than two hours, preferably overnight.

Serving
This dish serves 6-8 people.

German Potato Salad Ham Bake

Ingredients
  • 3 Cups of cooked potatoes (diced)
  • 1/2 cup of chopped onion
  • 3/4 cup celery (finely chopped)
  • 2/3 cup of water
  • 2 teaspoons of parsley flakes (dried)
  • 1 tablespoon of sugar
  • 1/4 cup apple cider vinegar
  • 1/2 teaspoon of mustard (prepared)
  • 1 tablespoon of flour
  • 1 cup of diced ham
  • 1 can of drained Bavarian sauerkraut
  • 4 slices of Swiss cheese
  • Butter
Directions
Preheat the oven to 350oF. Prepare a 8x8 inch cooking dish with a butter-flavored cooking spray. In a large serving bowl, mix potatoes, parsley flakes and celery. Add butter to a cooking pan and saute onion until it turns tender. Mix water, sugar, vinegar and flour to a covered jar and shake well. Add this mixture to the cooking onion. Keep stirring until the mixture thickens enough. Pour this sauce and sauerkraut to the potato mixture. Stir well and add ham chops to it. Put this final mixture in the prepared baking dish. Cover it with Swiss cheese. Bake until the cheese melts (approximately 20 minutes). Let the dish sit for 5 minutes and then serve it.

Serving
This dish serves 4-6 people.

Festive Purple Potato Salad with Cilantro

Ingredients
  • 2 pounds of purple potatoes (peeled and diced)
  • 1/2 cup celery (fresh and diced)
  • 1 purple onion (diced)
  • 1/8 teaspoon of ground black pepper (fresh)
  • cup of fresh cilantro (chopped)
  • 2-3 cloves of garlic (finely chopped)
  • Salt divided into 1 teaspoon and teaspoon
  • 2 tablespoons of chopped parsley (fresh)
  • Lime juice (1 tablespoon)
  • 1 cup of mayonnaise
Directions
Take a medium saucepan add the diced potato to it. Cover it up with water and add 1 teaspoon of salt to it. Bring it to boil and cover the pan with a plate. Reduce the heat to medium and cook the potatoes until fork-tender. Drain off all the water from the pan and let the potatoes to cool. In the mean time, prepare for the dressing. Take a large bowl and put onion, celery and garlic into it. Cut the cooked potato in approximately 1 inch pieces and toss them with the mixture. Add the remaining teaspoon salt and the pepper to it. Add the cilantro and parsley. Toss again, lightly. Add mayonnaise and lime juice to it and stir gently. Keep this salad in the refrigerator for at least 4 to 6 hours before serving.

This dish serves 4-6 people.
